There are difference between edible and not edible in English.
But in Japanese, there are no difference.
In case of you want to say the things of edible, you have to say chicken is とり(TORI), pork is ぶた(BUTA).
About chicken, there is difference in kanji. (鳥、鶏) The reading is same. (とり)
About beef, there is difference in reading. 牛(ぎゅう) the kanji is same.
When you say about edible things, you just adding the word “肉(にく)(NIKU)” behind the words “とり(TORI)” “ぶた(BUTA)” “ぎゅう(GYUU)”
If you want to say Mutton and lamb in Japanese, you should say マトン(MATON),ラム(RAMU).
It is difficult for Japanese people to read and write the kanji of giraffe and bat.

These kanji is very difficult. Kanji of whale and dolphin is commonly used.
